Olive Press and Cannery
Bouachir, Tunisia

A facility for the processing of canned olives and high-quality olive oil, the project is conceived of as an "archaeological garden" to encourage protection of the nearby historic ruins of the Roman city of Segermès and those of a Byzantine basilica and water reservoir. On the highest part of the 300-hectare site and orchard, the lower floor contains administrative, staff, and laboratory areas as well as visitors’ amenities; the upper floor contains facilities for the processing of canned olives and bottled olive oil; and a cylindrical silo for the storage of olive oil penetrates the two floors. The concrete-frame structure features hollow concrete-block walls faced on the lower exterior with local stone.
